Ve-G-Sausage Pancit Recipe:
1 can Ve-G-Sausage chopped diagonally
2 T coconut oil
1 medium onion sliced
4 cloves garlic crushed and chopped
1 medium carrot julienne (matchstick) cut
250g green (baguio) beans, chopped diagonally
1 medium cabbage, sliced fine
1 cup water
100-150g (1/2 cup) tomato sauce
1 medium red bell pepper sliced
1 medium green bell pepper
2 T soy sauce
1/2 tsp salt
1/2 tsp mushroom powder
1/2 tsp black pepper
250-500g bihon pancit, soaked in water 15 minutes or until tender.
Sautee garlic and onions in oil. Add carrots and sautee 1 minute. Add Ve-G-Sasauge, green beans, cabbage, bell peppers. Sautee 2 minutes. Add salt and stir through. Add pancit, stir to mix. Add soy sauce, mushroom powder and black pepper. Garnish with onion leeks and serve with calamansi juice to taste.
