Ve-G-Meat is an amazingly versatile product that goes by different names all over the world. With a firm roast meat-like texture it can be used in many dishes. Often it is removed from the can, cut into slices and fried to use in sandwiches, burgers etc. When cubed it is an excellent addition to a cucumber and tomato salad. Sliced, breaded and fried. Fresh salad. Afritada. Menudo. Ginataan. Ready to eat.
Afritada Recipe:
1 can Ve-G-Meat cut into 1/2 inch cubes
2 T coconut oil
1/2 – 1 kg potatoes cut into 1 inch cubes
1 medium carrot cut into 1/2 inch cubes
1 medium onion sliced
2 cloves garlic crushed and chopped
1 cup water
100-150g (1/2 cup) tomato sauce
1 medium red bell pepper chopped
1 medium green bell pepper
1/2 tsp salt
1/2 tsp mushroom powder
1/2 tsp black pepper
Sautee carrots and potatoes in oil until golden. Add onions and garlic and cook until onions are translucent. Add water and tomato sauce. Simmer 10 minutes or until potatoes and carrots are soft. Add Ve-G-Meat, bell pepper, mushroom powder, salt, black pepper. Simmer 5 minutes. Serve with rice.
